ÉPURE & Dalloyau by Yabu PushelbergPublished July 24, 2014
My friends are always asking me for restaurant recommendations, from a good traditional Chinese restaurant to a contemporary fine dining location. When it comes to restaurants on the island side, it isn’t usually a problem. I am truly not a Kowloon guy. I know I might sound arrogant but I just can’t justify to go to a restaurant whch is worth crossing the harbor. Well, I guess the newly opened French fine dining and pastries shop, Dalloyau Paris, has changed my attitude… ÉPURE by Dalloyau is located in Harbor City, T.S.T and this shopping mall is famous in low ceiling. When most of the luxury brands and fine dining restaurants are looking for high ceiling locations, Chris Chan and Michelle Ma, the owners of Dalloyau HK, took the risk and invited Yabu Pushelbery to be the interior designer for the whole project. I know Chris and Michelle through a mutual friend and they have been running a very successful skin care and food supplement brand, FANCL, for more than a decade. They are well-travelled and when it comes to restaurants, they always look not only for great quality food but also tasteful interiors and sophisticated ambience as well. Dalloyau surprised me in both ways (Their Saint Honoré is the To Die For dessert!!! MUST HAVE!!!) and what’s even more is they are both newcomers on the scene!!! As I said earlier, designing a fine dining restaurant in a low ceiling location is not easy. Yabu has turned something negative into something positive and this project is their first restaurant project in Hong Kong as well. Dalloyau has more than 300 years of rich history of French cuisine in France. Unlike the ones in Europe, Dalloyau HK is divided into 4 zones, La Boutique (for pastries and macaroons) and Le Café ( tea room), ÉPURE (a gourmet restaurant) and La Terrasse (a French garden). Each zone has its own distinctive color and theme. Yabu used customized and antique wall paper, beautifully crafted furniture, unique artwork and stunning marble floor to impress the audience. The beautiful artwork was designed by Yabu and it is a map of Paris. This artwork can be used as the front gate as well
